Organic Chinese green tea, hand rolled into tight pellets that look like shot, which is where the name came from. Rolling protects the leaf, so it keeps longer than most greens and brews bolder, with a slightly smoky and nutty edge rather than a delicate one.
If you have tried Japanese style greens and found them too grassy or too subtle, this is the opposite end of the same category and worth four serves before you decide green tea is not for you. It is also the base of Moroccan mint, so it is a useful reference point.
Cool the boiled water to about 80 degrees and keep the steep short, two to three minutes. The pellets unfurl slowly, so it looks weak for the first minute and then arrives all at once. Judge it by colour, not by the clock alone.
