Organic Indian black tea with bergamot essence, and nothing else. This is the plain, classical Earl Grey rather than the flowered French style, so the bergamot has the whole cup to itself and reads much more sharply.

Earl Grey is a tea people think they know, and bergamot levels vary enormously between brands. Four serves lets you find out where ours sits against whatever you are drinking now, which is a more useful comparison than any description on a page.

One teaspoon, freshly boiled water, two to three minutes and no longer. Bergamot goes soapy if you over steep it, which is the usual reason an Earl Grey tastes wrong. Traditionally served without milk, though nobody will stop you.
