Lapsang Souchong is black tea from Fujian province in China, roasted in bamboo baskets over burning pinewood. That is where the smoke comes from. It smells of timber resin, sweet paprika and the peaty end of a whisky, and it tastes the way it smells.
No tea in the range divides people harder. Buying a $29.95 pouch of this on a hunch is how a tea ends up at the back of a cupboard for three years. Four serves is the honest way in, and if you turn out to love it you will know within one cup.
One teaspoon, water straight off the boil, three to four minutes. Try it black first. A little milk tames the smoke considerably, which is useful if you find the first cup too much but do not want to give up on it.
