Oolong is semi oxidised, so it sits between green and black rather than belonging to either. This one is Indian, rolled into tight little balls that open up slowly in the water, with fruit and floral notes and a mild citrus edge.

Oolong is the category most people have never bought, usually because it costs more and they do not know what to expect. Four serves at $3.50 removes that problem entirely. It also goes further than four cups, because the leaf is designed to be used again.

Let the water cool to about 90 degrees, steep three to four minutes, then keep the leaf and brew it again. The second infusion is often better than the first and the third is different again. Two or three goes from the same leaf is normal, so a small sachet stretches a long way.
